🔥 Grow Guide: Pungent & Quick Mustard Microgreens

Mustard microgreens are perfect for those who like a serious flavor kick! They have a pungent, spicy, horseradish-like taste that adds incredible zest to any dish. Like their relatives, Cabbage and Broccoli, they are quick and easy to grow.



Here is your straightforward guide to growing a full Farmer You Kitchen Kit of these fiery greens.

  1. Prepare the Tray: Place an 8x8 germination pad in the kitchen kit tray and fully saturate the pad, draining off excess water.

  2. Skip the Soak: Mustard seeds, like other brassicas, are fast-germinating and do not require pre-soaking.

  3. Sow the Seeds: Evenly broadcast 10 grams of dry mustard seeds across the surface of the growing medium. Do not cover the seeds with soil.

  4. Mist: Lightly mist the sown seeds to ensure good seed-to-pad contact.

Notes on Germination

Similar to Cabbage/Broccoli, quick and easy.

  1. Apply Weight (Days 1–3): Place a second tray (or some other flat waterproof object) directly on top of the seeds. Place a weight (5 lbs) on the top tray for 2–3 days. This pressure helps push the roots down and encourages uniform height.

  2. Continue Blackout (Days 3–4): After removing the weight, keep the trays stacked or covered in a dark spot for a total of 3–4 days until the seedlings are about 1 inch tall. Mustard germination is quick and uniform, similar to Cabbage and Brocco

Can be mixed with milder greens for a flavor kick.

  1. Introduce Light: Once the seedlings are standing up and have reached about an inch in height, move them under a grow light or into a bright windowsill. They will quickly green up.

  2. Watering: Switch entirely to bottom watering. Pour water in along the sides of the tray and let the growing medium wick the moisture up. This prevents wetting the foliage, which is key to avoiding fungal issues.

  3. Airflow: Good airflow is important to keep the surface dry and the stems sturdy.

  1. Timing: Your Mustard microgreens will be ready for harvest in a quick 8–12 days.

  2. Look for Cotyledons: Harvest when the cotyledons (the first pair of leaves) are fully developed and green. For a slightly more intense flavor, you can wait for the first true leaf to barely appear.

  3. Cut: Use a sharp knife or clean scissors, cutting the shoots just above the root level.
